I have always loved carrot cake but only as a special treat!  Now I can have my cake and eat it too… Smoothies are the perfect way to recreate healthy desserts. This carrot cake smoothie always hits the spot.

This is designed to be a raw recipe, however, if you are not 100% raw, this recipe can be made with cooked carrots as well.

There is nothing better than finding creative ways to “rawify” or make a healthier version of our favorite flavor profiles. An important part of a diet and lifestyle change is finding things that are reminiscent of the things that bring us joy. Carrot Cake Smoothie

Ingredients

  • 1 large carrot, peeled and chopped into chunks (~1 cup)* see note
  • 1 cup nut milk or coconut milk
  • 1 large frozen banana
  • 1/4 c walnuts
  • 1 tbsp chia seeds (or ground flax)
  • 1/2 tsp pure vanilla extract
  • 1 t ground cinnamon
  • 1/2 t ground cardamom
  • 1/2 t ground nutmeg
  • 1 tbsp coconut oil

Instructions

Throw all ingredients into the blender, starting with the milk and blend until smooth. Sprinkle some coconut, cinnamon, or walnuts on top if desired.
