Sometimes the simplest meals are the best ones. I had this nut cheese with my Raw Flax Crackers for lunch. Add a salad and you are good to go.
Sun Dried Tomato and Basil Spreadable Cheese

Ingredients
- 1 c raw cashews, soaked
- 2 T extra virgin olive oil
- 2-3 T nutritional yeast
- 1 T lemon zest
- 1 T fresh lemon juice
- 1 t sea salt
- 2 T sriracha
- 1/4 c fresh basil
- 2 T sun dried tomatoes
Instructions

Put all the ingredients except basil and sun dried tomatoes in the food processor and blend until smooth.

Coarsely chop basil and tomatoes and add to cheese. Pulse until distributed.

Serve immediately or chill for later.
