These raw coconut flour crackers are a simple base for spreads and nut cheeses, similar to a water cracker.
Coconut flour is a helpful ingredient in the raw vegan kitchen for making breads and crackers. It has a number of characteristics that are quite different than baking with the traditional wheat or other grains. The biggest difference is that coconut flour is very dry, it will absorb a much greater amount of liquid. This means that to convert your recipe to one with coconut flour is difficult. One thing is for sure, it will require more liquid ingredients than the original recipe.
On the positive side, coconut flour is a high fiber, low fat, gluten free flour option.
If you do not have a dehydrator, you will need to let these dry on the lowest oven setting for a few hours. Each oven is different so keep an eye on it checking every hour after the first few hours.
Raw Vegan Coconut Flour Crackers

- 1 T chia or flax seeds, ground
- 3 T water
- ½ c coconut flour
- Pinch of salt
- 4 T EVOO
Make an egg substitute by stirring the chia seed into the water.
In a small bowl add salt to coconut flour and combine well.
Stir the wet ingredients into the dry forming a dough.
Roll the dough between sheets of parchment with a rolling pin to 3/8″ or desired thickness.
Cut into rectangles with a pizza cutter.
Dehydrate at 145F for 1 hour. Turn the temperature down to 115F and continue to dehydrate until crackers are crunchy.
