Spinach salad is always a good thing. It is a must in any culinary repertoire. The mild flavor of spinach pairs with almost anything. There are so many different flavor combinations to try.

This one has a little bit of everything: sweet, spicy, bitter, salty and umami. An easy weekday meal.

Sweet and Spicy Curry Spinach Salad

Ingredients

  • 1/3 c almonds
  • 1 T sesame seeds
  • 1 bag spinach
  • 1 tart green apple, diced
  • 1 T shallot, thinly sliced
  • 1⁄4 c raisins
  • 3 T seasoned rice vinegar
  • 3 T extra virgin olive oil
  • 2 t stoneground or Dijon mustard
  • 1 t soy sauce
  • 1⁄2 t curry powder
  • 1⁄4 t black pepper

Instructions

Combine the spinach with the apple, onions, and raisins in a large salad bowl.

Whisk the vinegar, EVOO, mustard, soy sauce, curry powder, and black pepper together in a small bowl. Pour over the salad and toss to mix just before serving.

Top with almonds and sesame seeds.
