There is nothing better than an idea inspired by an old favorite and what’s in the fridge. I bought some farm fresh collard greens on Friday from the Farmer’s market. I knew I wanted to use them for collard wraps but wasn’t sure what to use as filling. I had some walnuts I had soaked and a green apple and Waldorf salad came to mind. I love the apple, celery, walnut combo and it seemed like a great idea for a spread. Simple ingredients created an absolutely delicious collard wrap.
Waldorf Paté

Ingredients
- 1/2 cup walnuts halves, soaked
- 1 large apple, coarsely chopped
- 1 rib celery, coarsely chopped
- 1/4 c raisins
- 2 T sweet onion, chopped
- 1/2 lemon, juice and zest finely grated
- Freshly ground sea salt and black pepper, to taste
- 2 T fresh parsley, chopped
Instructions
Put walnuts in food processor and pulse until finely ground.
Add chopped apple and celery. And pulse until blended well.
Add remaining ingredients except parsley and process until spreadable.
Stir in chopped parsley.
Let sit for 30 mins or more before serving to allow onions to mellow.
