Happy Bastille Day everyone! French food is, without question, one of the great contributions to the culinary world. In honor of Bastille Day, I am sharing one of my favorite French inspired raw recipes, Raw Vegan Ratatouille.

Although this is not the traditional recipe, for raw foodies this dish is a wonderful way to use fresh summer vegetables (zucchini, eggplant, tomatoes and onion) and can be eaten raw or dehydrated. It is equally good warmed (in a dehydrator) as cold weather comfort food.
