This simple to make dark chocolate chia seed pudding satisfies that Chocolate Jello Pudding craving with the health benefits of chia. And to top it off it couldn’t be simpler to make. Chia puddings are a nutrition-packed alternative to smoothies. In this version, raw cold-pressed cacao powder is used, one of the top dietary sources of magnesium and other important minerals. In a pinch, regular cocoa powder can be used with fewer health benefits.

Using agave to sweeten the bitter cacao lowers the glycemic index compared with sugar-laden chocolate. Try this health-filled treat.

Dark Chocolate Chia Seed Pudding

Ingredients

  • 1/3 c Chia Seeds
  • 1 T dark cocoa or cacao powder
  • 1 c nut or coconut milk
  • ½ t vanilla extract
  • 1 T agave or raw honey

Instructions

Mix cocoa powder with dry chia seeds until well blended.

Stir together wet ingredients. Pour over chia seed mixture stirring rapidly to dissolve the cocoa powder.

Let sit on the counter stirring every 5 minutes for 20-30 minutes until chia seeds expand.

Eat at room temperature or chill.
