Ramen is probably best known as the inexpensive, instant staple food for college students and starving artists. This raw vegan ramen bowl takes it to the next level. Like most simple things, this dish can be an elevated experience with homemade, flavorful broth and noodles. 

For this recipe I recommend using our raw vegetable bouillion or the powdered version with mushrooms. Zucchini noodles are my favorite because they are easy to find but any spiralized vegetable will work. For a more starchy, filling ramen bowl try butternut squash or sweet potato noodles.

Raw Vegan Ramen Bowl

Ingredients

Ramen Bowl

  • 3 c Raw Vegan Vegetable Broth or filtered water
  • 2 T miso paste, any color
  • 2 T grated fresh ginger
  • 1 t nama shoyu, tamari or liquid aminos
  • 1 T hot chili pepper (jalapeno, or what ever you like)
  • 1 medium zucchini
  • Topping options (pick the ones you like)

Toppings

  • ½ c baby spinach leaves, tightly packed
  • ½ c thinly sliced carrot (1⁄2 carrot)
  • ½ c thinly sliced cremini mushrooms, fresh or marinated & dehydrated
  • ¼ c sweet corn
  • 2 t thinly sliced green onion
  • 2 T kimchi
  • 2T chives or scallions
  • 2 T cilantro
  • nori squares
  • lime wedge

Instructions

Cut the zucchini into thin noodles using a spiralizer or jullienne. Set aside.

Heat the broth or water to 118F in blender or dehydrator (simmer on the stove if not 100% raw). Add miso, tamari and chili pepper stir until miso is dissolved.  Add zucchini noodles to the broth. Add your preferred toppings. Serve immediately.
