I highly recommend this raw vegan celery root and apple soup as an introduction to the root. It has a nice balance of flavors, the apple is a perfect pairing. The truffle oil garnish provides an additional depth of flavor.

One of the great things about exploring raw foods is that I am trying so many new interesting things. Celery root is one of the vegetables that I have tried for the first time recently. I am not sure whether or not I had seen it before, but I am sure I would have passed it by if I did not have a recipe that specifically called for it.

Let’s face it, it looks pretty unappetizing. However, I am glad I decided to give it a try. Not surprisingly, it tastes a lot like celery but it has a stronger flavor.  The texture is more like a potato, so it works well in soups and purees where celery would be a fibrous, stringy mess. 

Celery Root and Apple Soup

Ingredients

  • 1/2 celery root (celeriac), peeled and rough chopped
  • 1 green apple, rough chopped
  • 1/2 c raw walnuts, soaked for a couple hours
  • 2 T EVOO
  • 1 T raw vegan vegetable bouillon
  • 1 c filtered water
  • 1 lemon, juiced
  • salt and pepper to taste
  • 1 T chives, finely chopped for garnish
  • 1 T truffle oil, for garnish (optional)

Instructions

Throw the celery root, apple, walnut, evoo and lemon juice into the blender with about 1 cup water and blend until smooth.

Taste and adjust with salt and pepper.

Toss the chives, apple slivers and truffle oil together and garnish your suplerlative soup!
