Collard wraps are a great portable raw food staple. This recipe, collard wraps with almond celery paté, is one of my favorites. Raw collard greens are crunchy and substantial, perhaps not everyone’s taste, but I love them. Some people find that the sugars and fiber in raw greens cause gas and bloating. If you are not 100% raw, you may prefer to lightly blanch the leaves in salted boiling water for a more digestible wrap. For more details visit The Kitchenista Diaries.

This wrap includes a sweet and savory almond celery paté, but any nut or vegetable spread will work. The options are endless. Changing the nuts, the dried fruit and the herbs create a different flavor profile. 

Try this waldorf paté, raw almond cheese with sundried tomato and basil, our spicy sweet potato hummus, or this spreadable cheese with the collards. It may sound boring but the paté is unbelievably delicious! 

 

Collard Wraps with Almond Celery Paté

Ingredients

  • 2-3 Collard Leaves, stemmed
  • 1 c celery, chopped
  • 1 tbsp grated ginger
  • 1 tsp minced garlic
  • 1 tbsp miso paste
  • ¼ c raisins, soaked to soften
  • ½ c almond meal
  • 1 tbsp fresh herbs, I used dill & parsley

Instructions

Clean the collards well, soaking and rinsing a few times. Remove the center rib with a sharp knife and discard it. Dry the leaves and set aside for the filling.

Put the other ingredients for the pate in a food processor and blend until combined.

Roll the pate in the collard leaves.
