A colorful addition to any table, this golden beet carpaccio salad is a favorite in my household.
Golden beets are smaller, more tender and sweeter than red. They tend to not have that strong, earthy taste. For those who do not like red beets, try this salad, it is simple but flavorful.

Ingredients
- 3-5 Golden Beets
- 1 T Extra Virgin Olive Oil
- Handful of whole basil leaves
- Salt and Pepper to taste

Using a mandoline slice the beets as thin as possible.

Toss beets in the olive oil.

Chiffonade the whole basil leaves by wrapping together into a cigar and cutting very thin slices. Sprinkle over the beet mixture and top with salt and pepper.
