When fresh corn is in season, this raw, vegan avocado and corn salad is a simple and delicious meal. I actually prefer fresh corn to cooked, so I jump at any opportunity to use it during the summer. I also love the fact that I can use my fermented salsa starter in another recipe to get more healthy probiotics.

To cut corn off the cob, use a small bowl inverted inside a larger one. Put the cob stem side down and cut the kernels off, while rotating the cob. Finish by scraping the corn milk out of the remaining cob for additional flavor.

Serve on a bed of lettuce or use this salad as a dip for raw tortilla chips.

Raw Vegan Avocado and Corn Salad

Ingredients

  • 1 ear of fresh sweet corn, husked and cut from cob
  • 2 T fermented salsa starter
  • 1 small avocado, diced
  • Juice of 1/2 lime
  • 1 T fresh cilantro, chopped
  • 1/2 t sea salt
  • Freshly ground pepper to taste
  • 4 c baby lettuces

Instructions

After husking and cutting corn from cob, pull out as many corn silks as possible.

Combine all ingredients except lettuce in a medium bowl. Let sit for 30 mins so flavors can marry.

Just before serving wash and dry lettuce and put in large bowl.

Put the corn and avocado mixture on top of lettuce.
Serve immediately.

The corn and avocado salsa can be refrigerated and used the next day.
