If you love the tangy tart taste of lemon, these little cookies are a tasty treat and easy to make. I took these to a cookout and kept them in the cooler until ready to eat.  Use Meyer Lemons for an even better cookie.

Lemon Melt Away Cookies

Ingredients

Dry Ingredients

  • 1-1/2 c almond flour
  • 1/3 c organic raw coconut flour
  • 1 pinch Himalayan pink salt

Wet Ingredients

  • 6 T raw honey, maple syrup or agave
  • 1/4 cup organic lemon juice
  • 1 T lemon zest
  • 2 t  vanilla extract
  • 1/4 c organic coconut oil (+ 1 tablespoon, melted/liquid)

Instructions

Combine dry ingredients in a bowl.

Mix wet ingredients in a measuring cup with a hand mixer or whisk.

Add wet ingredients to dry stirring until completely combined.

Take 1 tablespoon of batter and roll into a ball.  Coat with coconut flakes or ground nuts if desired.

 Refrigerate until ready to serve.
