This bright but filling pea soup is a great meal in warm or cold weather. The recipe even works with frozen peas. Adding the corn makes this soup a complete protein.

Raw Pea Soup

Ingredients

  • 2 c fresh or frozen peas (if frozen, thaw before using)
  • 1 avocado
  • 1 T raw vegetable bouillon
  • 2 T chopped onion
  • 1 garlic clove
  • 1 T extra virgin olive oil
  • 2 T freshly squeezed lemon juice
  • 1-1/2 c non dairy milk
  • 1 t Himalayan pink salt, more or less to taste
  • Dash of cayenne pepper
  • Kernels from one medium ear of corn
  • 1 tablespoon of fresh parsley or cilantro, chopped

Instructions

Blend all of the ingredients except the corn and parsley until smooth. Top with corn and parsley
