This bright but filling pea soup is a great meal in warm or cold weather. The recipe even works with frozen peas. Adding the corn makes this soup a complete protein.
Raw Pea Soup

Ingredients
- 2 c fresh or frozen peas (if frozen, thaw before using)
- 1 avocado
- 1 T raw vegetable bouillon
- 2 T chopped onion
- 1 garlic clove
- 1 T extra virgin olive oil
- 2 T freshly squeezed lemon juice
- 1-1/2 c non dairy milk
- 1 t Himalayan pink salt, more or less to taste
- Dash of cayenne pepper
- Kernels from one medium ear of corn
- 1 tablespoon of fresh parsley or cilantro, chopped

Blend all of the ingredients except the corn and parsley until smooth. Top with corn and parsley
