This raw sweet potato gnocchi is nutrient dense and tasty. Gnocchi used to be something I only ate at restaurants. Although I love to cook, it seems like a time consuming endeavor. Also I always enjoy the eating but afterwards they always feel a little heavy in my stomach. While it is not an everyday meal, these little pillowy bites are sure to satisfy any comfort food craving. 

Raw Sweet Potato Gnocchi

Ingredients

Gnocchi

  • 1 large peeled & chopped sweet potato (1 or 2 large sweet potato)
  • 2 T cashew (or other non dairy) yogurt
  • 1/2 t nutmeg
  • 1 clove garlic
  • 1/2 t salt
  • 3/4 c water
  • 1c psyllium
  • 1/2c coconut flour

Sauce

  • 2 T EVOO
  • 1 T EVOO
  • 2 T cashew (or other non dairy) yogurt
  • 1 T nutritional yeast
  • 1 t shallot, minced
  • 1/2 T agave or other sweetener
  • 1/4 t nutmeg
  • 1 t fresh sage, minced + leaves to garnish
  • 1/2 t sea salt
  • dash pepper

Instructions

Peel and chop sweet potato. Place in blender.

Add yogurt, nutmeg, garlic, salt, and water. Blend until smooth.

Add psyllium. Blend and transfer to a mixing bowl.

Using your hands, mix in the coconut flour.

Form small, gnocchi sized clumps from the sweet potato mixture, and place on a lined dehydrator tray. Press with a fork to make them look authentic.

Dehydrate at 145F for around an hour.

Put sauce ingredients in blender and blend until smooth.

Blend the sauce ingredients until smooth. Top gnocchi with sauce and sage leaves to garnish. Sprinkle with Raw Vegan Parmesan
