This spicy raw vegan daikon slaw is a tasty addition to any picnic table. If you have a mandoline slicer, it can make this dish quick work. The vinaigrette helps to mellow and meld the flavors.

Daikon radish is another vegetable that is a relatively recent addition to my diet. I love red radishes and saw these monsters in the supermarket. Although the radishes are large these are milder than smaller varieties.

I have eaten them in a green salad and just as a crunchy snack but this slaw takes it to the next level.

Daikon Slaw

Ingredients

  • 1/3 large daikon, julienned
  • 2 medium carrots, julienned
  • 1 T grated peeled ginger
  • 2 T seasoned rice vinegar
  • 2 t fresh lime juice
  • 1 T sriracha sauce
  • 1 T sesame oil
  • 1 t liquid aminos
  • 1 t white sesame seeds

Instructions

Add daikon and carrot to bowl.

Mix the other ingredients into a vinaigrette.

Let sit for 30 minutes so flavors and blend or chill until ready to serve.

Sprinkle sesame seed on top when ready to serve.
