A slaw recipe is the obvious first use for Kohlrabi, aka the German turnip. It is a vegetable in the cruciferous family, a close relative of cabbage. I have always loved vegetables and have tried a lot, but occasionally I run across something I have not tried before. This week at the farmer’s market I found purple kohlrabi. I have seen it before but had never tried this strange looking creature. This recipe I adapted from The Kitchn was a definite hit in my books!
This kohlrabi slaw has a sweet and tart flavor resembling the best coleslaw recipes.
Kohlrabi Slaw

Ingredients
- 3 medium kohlrabi, peeled, stems trimmed off, grated
- 1/3 purple cabbage, grated
- 2 carrots, grated
- 1/2 red onion, grated
- 1/4 c golden raisins
- 1 T agave
- 1 t salt
- 1 T cider vinegar
- 4 T chopped cilantro
- 1/4 c cashew yogurt (or more, if you prefer)
Instructions

Combine all ingredients in a bowl and mix well. Chill for several hours before serving.
