Made this with Organic Carrots of Many Colors from Trader Joe’s and middle eastern spices. Yum!
Morroccan Carrot Salad

Ingredients
- 1/4 c fresh lemon juice
- 1/2 t each of sugar, cinnamon, cumin, coriander, caraway seed and salt
- 1/4 t cayenne pepper
- 10-oz shredded carrots
- 1/4 c raisins,
- 2 T olive oil,
- 2 T chopped cilantro
- 2 T chopped parsley

Combine 1/4 c fresh lemon juice and 1/2 t each of sugar, cinnamon, cumin, coriander, salt and 1/4 t cayenne pepper.

Stir in 10-oz shredded carrots.

Transfer mixture to large bowl, add 1/4 c raisins, 2 T olive oil, chopped cilantro, and chopped parsley and toss to combine.

Cover and refrigerate until serving.
