Kale salad is a staple in my diet. The nutritional benefits of kale are well known. With over 45 different flavonoids it has strong antioxidant and anti-inflammatory properties. It also has a number of the B-complex vitamins and a number of the important trace minerals. Dr. Joel Fuhrman ranks it high on the ANDI scale.

The beauty is that kale pairs well with so many different ingredients. This simple salad is a well-balanced mouthful. Different nuts or seeds can be substituted for the almonds. Any dried fruit can replace the cherries.

 

Raw Kale Salad with Dried Cherries and Almonds

  • Suitable for Diet

Ingredients

  • 1 bunches of kale, rinsed and dried, center ribs and stems removed, leaves julienned
  • Juice of 1 lemon
  • 2 T extra virgin olive oil
  • 1 T maple syrup
  • 1/4 c raw almonds (soaked)
  • 1/4 c dried cherries or cranberries
  • 2 T nutritional yeast
  • Celtic sea salt to taste
  • Freshly ground black pepper to taste

Instructions

Place the thinly sliced kale in a large bowl and add salt. Massage kale until the hard fibers break down.

Toss with the lemon juice and olive oil until all leaves are coated. Add maple syrup, cherries and almonds and toss again until well coated.

Serve topped with nutritional yeast and black pepper.
