Tacos, tacos, tacos. Tacos come in many shapes and forms. Meat, chicken, seafood, vegetable, breakfast, dessert. And then there’s the choice of toppings: lettuce, cabbage, tomato, avocado, salsa, cheese… Any way you want them.
This recipe is a raw vegan riff on a ground beef taco. Walnuts processed with spices and sun-dried tomatoes give the same flavor and mouthfeel as ground beef. I topped mine with lettuce, tomato, raw cashew sour cream, nutritional yeast, and scallions. The wrap is my raw vegan tortilla recipe cut into 4″ rounds instead of chips. Delicious!
Raw Tacos
This simple recipe is a great raw vegan substitute for ground beef in any recipe. The liquid aminos “brown” the nuts and the tomatoes give additional depth of flavor.

Ingredients
- 1/4 medium onion
- 1 clove garlic
- 1 T sun-dried tomatoes (can use tomato paste in a pinch)
- 1 c raw walnuts, soaked
- 1 t ground cumin
- 1/2 t ground coriander
- 1⁄2 t chili powder
- 1 T liquid aminos
- cayenne to taste
Instructions
Process onion and garlic.
Add tomatoes, walnuts and seasonings.
Pulse until it resembles texture of taco meat.
Let sit to allow onion and garlic to mellow for at least an hour.
Serve on taco with lettuce, tomato, avocado or other toppings of your choice.
