This savory raw zucchini onion bread is the perfect base for any raw sandwich. It can be whipped up quickly in the food processor, dehydrated and frozen until ready to use. This is my favorite bread for my Raw Vegan BLT.

A cabinet dehydrator works best for this recipe so that the bread can be cut into rectangles. If you do not have a dehydrator, the bread can be made in an oven on the lowest temperature. It will require a close watch to ensure that the bread does not dry out too much.

Raw Zucchini Onion Bread

Ingredients

  • 1 small to medium zucchini, roughly chopped
  • 1/3 large sweet yellow onion, quartered
  • 1/3 c ground flaxseeds (about ¾ cup before grinding)
  • 1/3 c ground sunflower seeds (about 1/6c before grinding)
  • 1/12 c cold pressed, extra-virgin olive oil
  • 2 t tamari or liquid aminos
  • 1 T agave nectar

Instructions

Pulse zucchini and onion in food processor until finely chopped to your preference. Add the rest of the ingredients and pulse until completely blended.

Spread ¼ inch thick on dehydrator tray.

Dehydrate at 145 for 1 hour, then turn down to 115 for 4-6 hours or until the top is firm and you can turn onto mesh dehydrator sheet for more air circulation. Dehydrate for another 4-6 hours until the bread is firm but pliable.
