Who doesn’t love pasta? Sun-dried tomatoes are key to the depth of flavor in this red sauce.

Zucchini Pasta in Tomato Sauce

Ingredients

Tomato Sauce

  • 2 roma tomatoes (chopped)
  • 1/3 cup sun dried tomatoes in oil (if they are not in oil soak for 2 hrs)
  • 1-2 T fresh basil
  • 1T fresh oregano
  • 1 t fresh thyme
  • 2 cloves garlic (chopped)
  • 2T olive oil
  • 1 T Agave or other raw sweetener
  • 1 T lemon juice
  • Salt to taste

Instructions

Spiralize or julienne Zucchini. Toss in 1t olive oil and sprinkling of salt and set aside.

Put everything in blender and  blend until thick (use the tomato water if soaked).

Toss zucchini with tomato sauce and sprinkle with raw vegan parmesan or nutritional yeast.
