This reminds me of Caprese salad, one of my favorites. No better way to use fresh picked zucchini!

Zucchini ribbons with tomato and basil

Ingredients

  • 1 medium zucchini
  • 1/2 c halved grape or cherry tomatoes
  • salt and pepper to taste
  • 2-3 T fresh lemon juice
  • 1T extra virgin olive oil
  • 10 basil leaves

Instructions

Spiralize or ribbon the zucchini with a vegetable peeler as thin as possible. Halve the tomatoes. Toss the zucchini and tomatoes with olive oil, lemon, salt and pepper and let sit for a couple of minutes.

Chiffonade the basil leaves and sprinkle on top.

Serve at room temperature. Enjoy!
