This blueberry cheesecake smoothie is a new favorite of mine. The simple cashew yogurt gives it that cream cheese tanginess and the benefits of probiotics for a healthy gut.
The avocado adds just a bit of extra creaminess. If you want to reduce the calories you can omit it but it does add a nice texture to the smoothie.
Although I did not do it here, the great thing about blueberry smoothies is that greens can be added without changing the appearance. If you add greens, blend the greens first with a little water until smooth. Also, you may need to add another tablespoon of lemon juice to offset that bitter greens taste.
I just love that bluish-purple color. Who knew that color can be made naturally?

- 1 T raw coconut oil
- 1 T fresh lemon juice
