When cantaloupe is in season, it is always a challenge to eat it before it gets overripe. This creamy cantaloupe smoothie recipe is a tasty way to use it up quickly. Sometimes the simplest recipes are the best. Ripe cantaloupe is so juicy and creamy there is no need to add water or non-dairy milk.
Adding fresh herbs or spices adds another dimension of flavor. We used mint but any herb or spice that pairs well with sweet things will work. Try cardamom, cinnamon, nutmeg, fresh basil, thyme, or whatever catches your fancy.

Ingredients
- 2 c cantaloupe, cut into small chunks
- ½ of a banana
- ¼ c raw cashew pieces, soaked for a few hours, rinsed and drained
- 1 T coconut oil
- ¼ t fresh lemon juice
- Fresh mint leaves
