My grandma’s sweet potato pie was legendary. I have never made it but we have it every year for Thanksgiving.  Two weeks ago I ran across some online sweet potato pie smoothie recipes. I tried a couple but none of them met the mark. I finally decided to ask my mom about the original recipe.  Apparently my grandmother only used lemon and nutmeg to season the potatoes.

This is my favorite of the versions I have tried over the last few weeks. If you have time let the sweet potato sit in the lemon juice for 30 mins to soften it.

Sweet Potato Pie Smoothie

Ingredients

  • 1/2 c sweet potato, finely chopped
  • 1 banana, frozen
  • 1-2 T fresh lemon juice
  • 1 t grated nutmeg
  • 1 c non-dairy milk
  • 1/2 t vanilla
  • 3 T hemp or flax seeds
  • 1-2 T maple syrup

Instructions

Chop sweet potatoes and let sit in lemon juice.

Add all the ingredients to a blender. Blend until smooth.
